The Loaf

this was a loaf that I just baked in a circular pan

I make a breakfast loaf every week. For me it's easy and a good part to add to any breakfast. It's something fast to make and eat on the go during a busy morning.


My recipe for a loaf base is pretty much the same every time. The additions depend on what is lying around or maybe what is in season. I like to use a garnish on top as well to make it a bit more crunchy and add texture.


A recipe like this can also be translated into muffin form instead of a loaf, but I'm lazy and just want to put it into one thing. Less washing! Sometimes I like to make a fried egg, soft and eat it on top of the piece of the loaf as well.


This is my secret recipe. I'm letting it out to the world in hopes that you can add it to our breakfast to make it a bit more exciting!








rhubarb loaf
this is one with rhubarb, same recipe

Base Loaf Recipe

Ingredients

2 cups flour

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

1 tsp nutmeg

1 cup granulated sugar

1 cup vegetable oil or butter

2 eggs

1 tsp vanilla

Additional flavouring's

1.5 cups frozen blueberries, rhubarb or frozen raspberries

1.5 cups pumpkin puree

3 Bananas mashed


Directions

-Preset oven to 325F

-Grease loaf pan with butter or oil

-Combine eggs, oil and sugar in a large bowl, until mixture becomes a pale yellow colour

-In separate bowl, combine all the dry ingredients

-Fold dry ingredients into wet until a smooth mixture comes together

-Add loaf mixture to the pan and top it with whatever

-This loaf will take about 40 minutes to an hour to bake, so sit back and enjoy the smells that will go throughout your house

*if you need to test if it's baked, just put a knife in and if it comes out clean, it's baked


Additional Ingredients and toppings

-Some additions like yogurt or sour cream can be added to make it more moist

-Think about using overripe fruit or fruit scraps that you may have in the freezer

-You maybe want to mix up the flour too by using All Purpose, whole wheat or rye flour, just for a different taste and to make it more healthy

-Try using nuts or oats on top for a garnish or something like turbinado sugar to get a crunchy texture on top.
