Lemony loaf

a recipe for a little snack to have in the afternoon or maybe for brunch


This beautiful thing is best to have with a nice cup of coffee or a tea. The glaze isn't like a super sweet frosting, so it's not going to be a super sugary treat. It is tart and moist, with crispy edges and a soft inside.


If you want to add more stuff to the loaf, you could potentially add blueberries if you want to this recipe or nuts. I also only added poppy seeds to the glaze, but you could of course add them to the actual batter of the cake.

Ingredients

Cake

155g All Purpose Flour

8g Baking Powder

1 pinch salt

55g Butter

180g Sugar

4 eggs

80g 35% cream (whipped)

2 Lemons, zested and juiced

1oz Rum

Glaze

1 tsp Poppy seeds

4 tbsp. icing sugar (sifted)

1-1.5 tbsp. lemon juice


Preparation

-Preheat over to 340F

-Mix all dry ingredients together and set aside

-Using a mixer, cream butter and sugar until fluffy

-Add eggs, lemon juice, zest and rum

-Whip cream in separate bowl until hard peaks

-Fold whipped cream into the wet mixture and begin folding in dry ingredients lightly with a spatula

* If you are not sure what folding means, it literally means to gently add another ingredient to a wet mixture with a spatula very gently to not destroy the air. Think of a soft stirring action!

-Grease loaf pan with vegetable oil or butter and add mix into pan

*I used olive oil this time (just because it was the first thing I grabbed out of the cupboard. I think it may have made the edges more crispy, which just shows you that sometimes you just have to use what you have around when you are cooking

-Smooth the top out and place in the oven to bake for 35-40 minutes (the cake will become golden brown in colour and slightly crispy on the top

-To make the glaze, sift the sugar into a bowl and add poppy seeds

-Add lemon juice, until it becomes a slightly runny texture

*If the glaze is too loose, then you can always add more icing sugar to thicken it

-Once loaf is baked, flip over onto a wire rack to cool for about 10-15 minutes

-Glaze loaf with the prepared glaze and slide on to a plate to serve
