Crunchy, Peanut Butter, Oatmeal Cookies

A quick and kind of healthy snack to tide you over until dinner


So a few days ago I was feeling grumpy and I looked outside and it was pissing rain. Some days you really just need some comfort food in you to get you going again. So you could just go to the store and buy a box and eat your feelings, but wouldn't it taste better if you made the cookies yourself?


Well the simple answer to that my friends is, of course it will! At least that way you would feel better about it, since you know what's inside of the dozen cookies you're about to eat.


I came up with this recipe, while trying to convince myself that I could create one that could be healthy-ish. With a cookie recipe, you kind of can make it healthier by adding and taking away certain ingredients, while not straying too far from it's original self. I started from a classic peanut butter cookie recipe, then added little bits here and there. So I took away most of the flour and just used quick oats, cut down the sugar slightly and used all natural peanut butter instead of processed. Little changes, which I think make a change for the better.


For me a cookie is a cookie and should taste like a cookie and it should make you happy. It should be buttery and crispy and yummy and make you want to eat another right after finishing first one. With that being said, here is my quick recipe which I'm sure you will love. You can always add dried fruit or another nut if you prefer. Let me know what you guys think!


Crunchy Peanut Butter, Oatmeal Cookies

Ingredients

½ cup soft Butter

½ cup Brown Sugar

¼ cup White Sugar

1 Egg

½ cup Peanut Butter (try to use chunky or one that is on the natural side)

1.5 cup Quick Oats

2 tbsp. All Purpose Flour (heaping)

1 tsp Baking soda

¼ cup Semi-Sweet Chocolate chips

¼ cup Pumpkin Seeds

1 pinch salt

Recipe

-Cream butter and sugar together until light and fluffy

-Add egg and peanut butter

-Combine oats, flour, baking soda, and salt

-Fold dry ingredients into the wet

-Add chocolate chips and pumpkin seeds

-Preheat oven to 375®F

-Scoop dough into small balls onto a tray with parchment paper

-Flatten the balls slightly with a fork and bake for 10-12 minutes

-Let cool fully on the tray


*keep an eye on the oven since they might quickly go dark close to the end of the baking time

*Makes about 12-15 cookies
